
I use fresh Brussels sprouts and gold potatoes for this recipe.
- Ingredients:
- Brussels sprouts
- Gold potatoes
- Sea salt
- Black pepper
- Minced or Roasted garlic (I use dried, roasted garlic)
- Olive oil

- Directions:
- Slice Brussels sprouts in half (use as many as you need for your family)
- cube potatoes (use as many as you need for your family)
- place in baking dish
- Generously drizzle with olive oil and mix to thoroughly coat the vegetables
- sprinkle salt, pepper and garlic over the vegetables
- roast on 400 degrees for 25-30 minutes
These can also be done in an air fryer on 375 degrees. I put my potatoes in first and let them cook about 6 minutes and then add the Brussels sprouts. Continue cooking for another 6-8 minutes.
Depending on your main dish, you can change the roasted vegetable seasonings to compliment the other dishes. I love to use a Mediterranean seasoning or lemon pepper.
