These biscuits are delicious, grain-free, and versatile. You can add one or two teaspoon of herbs of your choice to make them a dinner biscuit. I like baking them in an iron skillet with a little olive oil for a nice crunchy bottom. Enjoy!
- Ingredients:
- 1 cup almond flour
- 2/3 cup arrow root
- 1/3 cup coconut flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 tablespoons coconut oil
- 3 tablespoons butter
- 1/2 cup coconut milk (canned and I use full fat)
- 1 1/2 teaspoon lemon juice
- 2 eggs

- 1. Combine dry ingredients.
- 2. Add butter and oil then mix until crumbly.
- 3. Add milk, lemon juice, and egg in a separate container and mix well.
- 4. Fold milk mixture into dry ingredients and mix together until well blended.
- 5. Let sit for a few minutes to allow the flour mixture to absorb the liquid.
- 6. Form into balls and place in a iron skillet (or pant of your choice) that has been greased with olive oil.
- 7. Bake until a medium brown color (20-28 minutes)

When the biscuits are finished, I like to turn them upside down on a cooling rack or plate to keep them from becoming soft or soggy on the bottom.
I have made these biscuits more than once. They are great and they freeze really well and warm well in microwave or air fryer. Really DELICIOUS!!!
Thank you! So glad you enjoyed them.
